Whole 30 Day 30!!! and 31

TaDAH!!!  We made it through the Whole 30!  No cheats, no major meltdowns…we are feeling amazing!!  The thing that really hit me yesterday was my energy.  You get into such a funk of lethargy and laziness when you are eating too much convenience food or having too many sweets.  You don’t even realize that you have lost energy, you just don’t want to do anything.  My energy has been boundless the last 2 weeks, and I attribute all of it to the Whole 30 way of eating.

It’s like you don’t even realize that you sorta, kinda feel like crud, and your pretty much would rather sit on your tush all day–it just becomes the norm and you don’t question it.  Feeling this good and getting so much done is a major benefit of the Whole 30–you suddenly realize how amazing you can actually feel.

To finish out the Whole 30 with style, we had Pork chops over a sweet potato & apple compote.  It is really tasty, and tastes like you’re having dessert for dinner!

So I chopped up 2 Granny Smith apples, and 1 large sweet potato, drizzled a bit of olive oil over top, then sprinkled with salt and cinnamon.  Cover in foil and placed in the oven at 400 for 25 minutes.

Then I sprinkled salt, pepper and Thyme over all the pork chops and put them in the pan for about 4 minutes per side.  I am not a master at cooking pork chops, so there may be a better way to cook them, but that’s how I did it.

Then, once they’re all cooked up, you spoon the compote onto plates and put a chop over top! Voilà, deliciousness!

So, if you’re familiar with the Whole 30, you know that on day 31, you reintroduce a food group that was eliminated.  We decided to start with grains, so I had toasted Ezekial Bread with eggs and chicken sausage.

It was very tasty and I had no discomfort or negative reactions after.  My morning went normally and I felt great!

For lunch I had Rosemary Sourdough bread and Turkey breast with mayo!  Very Very tasty!

My GT’s Gingerade was a light, refreshing beverage to go with the sandwich!

Our dinner was the awesome grass-fed angus burgers I found at Costco!  When we had these back on Day 10, I made sweet potato buns for them, and we loved the combination.

Whole 30We had them with regular buns from the grocery store–nothing organic or special about them.  And of course I baked up some sweet potato fries, because what else goes better with a burger?!

Whole 30I felt great the entire day, and have suffered no ill effects 24 hours later.  So I think it’s safe to say that I don’t have any gluten sensitivity.  My problem comes when I have it too often–then I start feeling lethargic and craving junk food.

The only thing I noticed was how incredibly drowsy I was at bedtime.  I had a great night of rest the night before, so I attributed it to the sudden processed carb intake.   But, I wouldn’t usually have that many processed carbs in one day anyway, so it was to be expected.
