Whole 30 Day 20 & 21

We reached the end of our 3rd week of the Whole 30 with some yummy meals!  Both of us have been feeling pretty fantastic, with better sleep, and more energy.  Ya know…the stuff you can’t buy when you need it.  Eating foods that nourish you is incredibly energizing–I love going to bed feeling pleased with my food choices.  It’s a fantastic feeling.

For dinner on Sunday, we had Salmon and whipped cauliflower (I gave my recipe for the cauli back on my Whole 30 Days 12-14 blog post–so yummy).

The salmon was tasty–but no more so than when I just baked it in the oven with lemon juice, garlic, and butter.  I was hoping for a different flavor, so I will have to keep searching for some other salmon recipes.

For day 21 I made Crab Cakes with Lemon Aioli  sauce and sweet potato fries.  I am not a huge fan of seafood, and as I was mixing the crab in with the peppers and green onions, the scent was a little too strong for me.  I was worried that I’d really hate the food, or worse, that it would make me sick.

However, once these were fried up, they were pretty tasty.  I can’t say that I will be making them again, but if you’re a fan of crab, you really need to try this recipe.

Now the Lemon Aioli  Sauce on the other hand, was very tasty.  The only thing I would change would be to use a light olive oil, instead of the extra virgin.  It had a slightly bitter aftertaste, which I did not enjoy.

We are super excited to be on our last week of the Whole 30!!  Michael wants to reintroduce cheese first, but I’m really wanting some rice to switch my carbs up.  Maybe we’ll arm wrestle for it.
